Digestive Biscuits

Ingredients

  1. 100g Wholemeal Flour

  2. 40g Plain Flour

  3. 1/2 tsp Baking powder

  4. 1 tbsp. oats

  5. 120g softened butter

  6. 100g soft light brown sugar


Required – Mixing bowl, wooden spoon, scales, rolling pin, baking tray, greaseproof / baking paper

  1. Preheat oven to Gas mark 5/ 190 C

  2. Line the baking tray with greaseproof/ baking paper

  3. Mix together the two flours, baking powder and oats.

  4. In a separate bowl cream together the butter and the sugar until light a fluffy

  5. Add in 1/3 of the flour mixture and 1/3 of the milk, mixing until incorporated. Repeat with the remaining flour and milk until all in combined.

  6. Turn out onto a well floured surface

  7. Knead the dough until it is smooth, but speckled with oats.

  8. Gently roll out the mixture until it is about 1/3 of an inch thick

  9. Cut out your digestives using your chosen cutter, and place carefully on the baking tray.

  10. Place in the middle of the oven for about 15-20 minutes or until slightly golden around the edge.

  11. Place onto the cooling rack until completely cooled.

You can now decorate your digestives whoever you would like. Maybe dipped in chocolate or let the children loose with the icing?

Alternatively you could leave them plain for that wholesome oaty flavour.
