Chocolate Cupcakes

For as long as I can remember chocolate has always been a feature in my nans cupboard. chocolate of every variety, it did not matter what it was as long as it had chocolate. Chocolate bars, chocolate eclairs, chocolate ice cream and cakes.


Which is why it probably stands to reason that Chocolate cupcakes are somewhat of a nostalgic enjoyment for me and as like many, has been the pinacol cake of their childhood.


There was always chocolate cupcakes at every party I attended as a child, just like there is always an alternative of chocolate cake on every dessert menu.

So I felt it was only right to ensure that I gave my many times tried and tested cupcake recipe which is so easy and simple to make. it doesn’t contain many ingredients or many steps which is great when you are entertaining little ones, or you are just in that need for a major chocolate fix.


They can be decorated simply with even more melted chocolate on top, and your favourite sweet or chopped chocolate bar, or you can check out the buttercream recipe I have and top them with luxurious creamy buttery icing.

however you choose to top them I promise you, you will be the talk of the bake sale with these moist and fluffy chocolate cupcakes.


This recipe makes 12 cupcakes, and if you’d like a butter cream topping you can find the recipe here



Ingredients

  1. 100g Plain flour

  2. 20g Cocoa powder

  3. 140g Caster sugar

  4. 1 1/2 tsp baking powder

  5. 40g Unsalted butter

  6. (room temperature)

  7. 120ml whole milk

  8. 1 egg

  9. 1/4 tsp vanilla extract

You will require

  1. Teaspoon

  2. Scales

  3. Mixing spoon or electric whisk

  4. bowl

  5. cupcake tray

  6. 12 cupcake cakes

  7. sift

  8. cooling wire rack

Toppings of your choice; melted chocolate, icing sugar or buttercream


Method

  1. Pre heat the oven to 180C / 160C fan/ Gas 4

  2. Place your 12 cupcake cakes into your cupcake tray and set to one side

  3. In your bowl mix together the softened butter and sugar until creamy

  4. Add in the vanilla essence

  5. Add the egg and mix well

  6. Add in the Cocoa powder and mix until all the cocos is combined

  7. In the sift add your flour and your baking powder

  8. Sift in approximately 1/3 of your flour mix and 1/3 of your milk and mix well.

  9. Now add half of the flour and half of the remaining milk and mix again

  10. Add the remaining flour and milk and mix until your have a smooth cake batter.

  11. Using your teaspoon, spoon your batter into your cake cases

  12. Place in the middle of the oven for 20-25 minutes, or until they form domes and spring back when lightly touched.

  13. Remove from the oven and place on your cooling rack

  14. leave in the cupcake tin until completely cool

  15. Once the cupcakes are cool they can be decorated with butter cream, icing or melted chocolate.

Once your cupcakes are cool, you can decorate these however you want, with multi coloured butter cream, or with melted chocolate, or even just simple icing. You can be as creative as you like, and they are always a winner at the bake sale.
